Yes, surprised. That was my reaction too. It was out of curiosity that I accepted his invitation and went to his home. And I was happy with the outcome. Gino is a passionate drummer who has worked with many celebrities like Shivamani and A.R. Rahman. The moment we meet him we realize that music is running through his veins. The way he creates magnificent rhythms out of anything is awe-inspiring. It was the corona crisis that forced the chef out of this drummer. Gino specializes in Layered Parotta steamed in banana leaf, for which he has given the name Nila Amittu. The name means a cracker that bursts in layers. And the preparation is true to its name. It is an explosion of layers of a variety of tastes. When we reached Gino\'s home, he had finished cooking most items except mutton masala which he cooked with us. Gino adopts a slow-cooking method for his dishes, which enhances taste. Music was a compulsory accompaniment to every stage of cooking. In Nila Amittu parotta, we get parottas in many layers with masala fillings between the layers. Although beef is his specialty, he made mutton for me. There were other layers of chicken, eggs and dry fruits as well. The layered parottas are wrapped in a banana leaf and steamed. Nila amittu is ready. I loved the aroma that the banana leaf wrapped parotta let out. All the layers of it were tasty, but my personal favorite was the layer with mutton gravy. Hashmi who was with me tasted beef, and he loved it.'
